Indian Rice Pudding – Kheer

Also known as kheer, the Indian rice pudding is a one of those comforting desserts that satisfies one’s hunger pangs with a heavenly taste. Made from rice and milk, this rich and aromatic delicacy has a perfect balance of sweetness and tenderness.

Ingredients

  • 500 ml Daima Whole Milk
  • 1/4 cup Basmati Rice, soaked in water for 30 minutes
  • 1/4 cup sugar
  • 1/2 tsp. saffron
  • 1 tsp. cardamom powder
  • 1/4 cup almonds, silvered
  • 2 tbsp. pistachios, finely chopped
  • 2 tbsp. raisins
  • More pistachio, almonds and saffron for garnishing

Pour and boil the milk in a pot.

Add rice to the boiling milk and cook for 25-30 minutes. Stir continuously and keep an eye on the milk to make sure it doesn’t spill over.

Once the rice is properly cooked, add sugar, saffron, cardamom powder, almonds, pistachios and raisins. Cook until the pudding thickens.

Garnish with finally chopped almonds, pistachios and saffron. Serve hot.

You can also chill it in the refrigerator and serve cold. (optional)
